It is a polyglyceride which is obtained from sunflower oil by following the green chemistry principles. Oil normally have a chemical structure containing 1 glycerol to which 3 fatty acids are attached. But this is the modified version of oil, the fatty acids attached to glycerol has been changed or rearranged.
